Beef tartare with aged cheese, served with endives.

IngrEdients
- 450g fresh beef (round steak, tenderloin, or sirloin)
- ½ cup strong cheese (1608 from Laiterie Charlevoix)
- ¼ cup pitted green olives
- 2 tbsp. parsley
- 2 tbsp. chives
- 2 French shallots
- 1 clove of garlic
- Endives
- Olive oil
- Tabasco
- Salt and pepper
Steps
Dice beef into mini cubes
Cut cheese into small cubes
Finely chop garlic, shallots, chives, parsley, and olives
When all ingredients are ready to get to know each other, mix together in a large bowl and season to taste with salt, pepper, avocado oil, and Tabasco
Place cookie cutter on a plate and add the mixture. Make sure the mixture is compact by pressing in with a spoon or your youngster’s fingers.
Important: Remove the cookie cutter before serving
Skin the endives and garnish the tartare any way you’d like, as long as the beef looks like a princess
Serve immediately while it’s still "hot!"
