A brie cheese mountain topped with a chocolate avalanche and a landslide of hazelnuts and berries.

Portions: 3-4 people

Cooking time: 6 minutes

IngrEdients

  • 2 brie cheeses as creamy as your day dreams (try Québec’s l’Attrape-cœur provenant de la Trappe à fromage)
  • ½ cup sugar-free dark chocolate chips
  • ½ cup 35% cream
  • ¼ cup hazelnuts
  • ¼ cup blueberries
  • ¼ cup blackberries
  • 1 cup butter

Steps

  1. As my mother always says, “set your oven to 350F!”

  2. In a cast iron skillet or oven-proof dish, stack the 2 bries one on top of the other so that they kiss

  3. Don’t even think about it. It is not the time to start a load of laundry!

  4. Bake for 6 minutes

  5. Pour cream and chocolate into saucepan and cook, constantly stirring in a frantic state until well mixed, smooth, suave, and creamy

  6. Remove from heat and place on top of stove if possible, otherwise, keep warm

  7. Roast hazelnuts in butter and set aside

  8. Remove cheese from oven and glaze with chocolate coulis

  9. Add fruits and nuts

  10. Serve immediately to your guests that haven’t left yet
