Who says love is all you need when you can share this strawberry mousse too? Someberry’s gonna love sharing this creamy treat with you.

- 1 cup (250 mL) strawberry purée
- 1 tsp (5 mL) strawberry essence
- 1/2 cup (125 mL) granulated erythritol
- 2 cups (500 mL) whipping cream (35% fat)
- 1 sachet gelatin
Steps
Walk over to the food processor to hook up for a berry good time, and wonder why you can’t seem to turn it on.
Wait awkwardly for a little response, come on, gimme something at least.
Realize you need to hook it up to the power before you’ve got any hope of getting busy.
Plug the food processor in and add the strawberry purée, strawberry essence, erythritol and gelatin.
Use the pulse button to send little tingles of pleasure through the mix. You don’t want this to be over too soon, right? Go easy on that button (it’s sensitive) and take your finger off it every 3 seconds or so.
In a saucepan that’s feeling as saucy as you are, heat the mixture for 2 minutes.
Cool your jets while you give the mixture time to cool completely.
Meanwhile, whip the cream until it turns into *ta-da!* whipped cream. If you somehow manage to turn it into something ask, wonder where the heck you went wrong.
Time to grab a spatula and do some matchmaking in a bowl! Get the cream and strawberry mix all in a swirl, then give them some privacy in the fridge for 30 minutes.
Eat straight from the bowl, wherever the fancy takes you. Sharing with someone special is optional and subject to mutual consent.
Extra-optional: Serve with a sprinkling of roasted unsalted pistachios.
